Agar-agar is in the market in three different formats, of which the agar powder and flakes are those containing higher proportion of natural fiber, for being a more concentrated agar-agar.

They are the formats the easiest to use in cooking, they do not require pre-hydration and can easily be weighed and dosed, opposed to the strips.

Basically, the difference in use between powder and flakes is the cooking time. Powder only takes 2 minutes to cook once the liquid has started to boil, while the flakes need between 8 and 10 minutes. By incorporating the flakes, we must take special care to avoid lumps. One way to avoid this is to sprinkle the flakes in a shower with care, and stir the mixture occasionally.
